Buratti company has deep roots in family tradition, which originated from a humble favor shop passionately managed by Alda Buratti. What began as a simple commercial activity soon transformed into something more significant when, alongside shop management, artisanal processing and production of dragées were added.

The success story continues with the introduction of the third generation of the Buratti family, who carry forward the entrepreneurial legacy with a company organized for distribution to stores and wholesalers. Constant commitment and dedication to quality have supported the continuous development of the business over the years.

PRODUCTION

Ingredients Preparation

The Dragée Crafting Master chooses and selects basic raw materials, such as almonds, and additional ingredients such as cocoa, fruits, and creams.

Dragée Coating Process

The Dragée Crafting Master manages the dragée coating process and accurately measures the ingredients to achieve a texture and taste in accordance with the original recipe. The process traditionally takes place in copper pots where the coating becomes uniform and the color is created respecting the chosen raw material for the dragée taste. It is controlled by the skilled mastery of those who know the desired end result even before seeing it, starting from coating the almonds with a mixture of nuts, creams, or cocoa, and then dragéeing them in a very thin layer of sugar, which gives crunchiness to the bite and characterizes Buratti's blend of textures.

Polishing and Finishing

The Dragée Crafting Master oversees the dragée coating process to ensure optimal taste experience, one of the distinctive features of Buratti dragées. The finishing touches of the dragées to give them a smooth and glossy surface are expertly managed to make Buratti Dragée perfect, like the occasions it celebrates.
